(This is a car camping question)

The Prius has a “ready mode” where the gas engine is off, but the heater or the air conditioner will continue to work off the hybrid battery, keeping the car warm or cold while you sleep.

During the night, automatically without driver input, the gas engine will start and recharge the hybrid battery when needed and then will turn itself off after the hybrid battery is recharged.

Does the Ford Escape Hybrid have a similar mode? Will it keep the car warm or cold while you sleep?

That's literally exactly how the Escape hybrid operates...
