Let's start with what engine?
I'm assuming this is a 1.6L since the 2.0L EB in the 2013-2015 Escapes were pretty much rock solid.
If the car is running right and this is a 1.6L they are known for having coolant bypass valves that crack causing a low level leak (as in weeping coolant or a slow leak). Its a cheap, easy fix if this is the cause.
The 1.6L coolant hoses, coolant valves and stand pipe are a plumber's nightmare, don't assume you've got a case of coolant ingestion. A mechanic will need to pull the spark plugs and take a look at the cylinders with a bore scope after putting the cooling system under pressure overnight.
With regard to Ford covering an engine that was replaced 5 years ago, its doubtful unless you have any extended warranty.

I have a 2017 Ford Escape with a 1.5l I had my engine replaced 2 times cuz of the coolant intrusion.
The 1.6L EB is an entirely different engine from the 1.5L EB, odd are in this case that if his degas tank doesn't test positive for combustion products he's got a weep from a cracked coolant bypass valve.
